i took up Foodservice management as my elective this semester and was one of the 20 appointed to take up the post of a general manager for one practical. In a practical, the whole class is supposed to pretend that they are working as a food service organization and for every practical everyone would assume different levels of position depending on a working position chart that our lecturer had came up with.
The practical that i was appointed to be the GM happened to be the first, besides that i dont reali have much of a clear view of what is expected of me apart from the job specification i was given. That all became the foundation of my stress.
Some preliminary problems faced were:
- The preparation time was only 2 weeks. (i'm not complaining much about the time but just that it happened to be both christmas and New year in between. Taking up much of the time to meet up with my management group)
- Its not reali possible to do much macro-managing with some of the members in my management team not really familiar with being competent and taking up leadership roles.
- Being the General Manager, as the title defines , it means i have to make sure that all the all aspects tht concern the foodservice organization are covered. From planning of the working schedule of all the workers to the decoration of the table setting.
- I gotta be in charge of coming up with a menu . (but this is one of the easiest problem to solve though)
A couple major problems were only solved a day before the big day....one of such was the rice paper. one fren even sepnd half the day looking for it to no avail and missed going to Pulau Ubin earlier with my church frens. That left me feeling so guilty abt it cos this was supposed to be my work.
