A truffle for your thoughts?
Gourmet, formal sit down party, group of sugar thirsty youths......made me decide to make a truffle stack for Katie's graduation dinner party. Since she was home-schooled till this year, she do not have a prom/formal that she can attend. So that's the reason and because we love her, that we all decked out in formal wear on this humid and "balmy" (as Pete would call it which is interprete as ultra hot!) night. Imagine 17 youths ages ranging from 13-32 all squeezed into the already reasonable large dining table with elbows hitting, with perspiration running down the face, sweat patches in embrassing places, trying to eat politely as if we are at a posh dinner party with mountains of food stacked on our plates.....
The point for us to sit around the table was that we would be able to chat with practically anyone around the table but I ended up just talking to my neighbours Trev, Pete, Josh and Jess.
Back to the truffle stack, it was by far the easiest to assemble apart from the fact that it took me a couple of days to make all the truffles. To cover that cone approximately 30cm (if i'm not wrong), it took about 160-170 truffles (the mathematical side of me was lost in the wee hours of the morning with both hands covered in chocolate, legs sore from standing for the last 6 hours and the only thing i want to do was to hit the sack!) that are either made of Tim tams or red velvet cake. They are either coated with milk, dark or white choc and then with hazelnut meal, peanuts, coconut, cocoa powder or icing sugar. I have been making the Tim tam truffles for a couple of years and they were by far always a crowd pleaser *if no such word exists, I made it up just fyi*. Humidity never seem to bother them and keeping their shape is definitely no problem.
But for the red velvet.....hmmm...though that cake was a hit when I made it for Han's birthday party with cream cheese frosting, I personally regretted making it into a truffle. It did not really hold the shape very well and had the tendency to become too soft. But anyhow, as I always say, there's always more for me to learn.
After a huge dinner with beef enchilades, baked turkey spring rolls (my idea, its actually one of the regular favorite way to load up veggies in a light but still filling way) and quiche Lorraine, plus a yummy berry trifle with a macroon to top it off made everyone so stuff to even fit in more than two truffles.
So the remaining truffles.....the gurls were more than happy to have them for the next few days. Thats one good thing about having a big family. Food never goes to waste. Though my family is half the size of Josh's.....there's always an issue for my mum when it comes to getting rid of leftovers. Guess we are probably fussier eaters than the gurls who are so easy to cook for.
In my rush to get to Mum and dad's place, I forgot my camera. And thus, I have to borrow a camera which still is able to give decent but not as good pictures. Better than nothing I guess. Well, at least I remembered everything that was required to make the truffle stack. So please excuse me for the lousy picture quality. I'm not really sure if I would be able to have time to post another entry before I leave for SG this coming Tues. But I wish all you my dearest the best and would see ya (with the promised recipes of course!) in a couple days, weeks time.....hopefully I won't neglect this bog on my vacation.....*cross fingers*
